Background Information
Dark roast coffee highlights the skills of the roaster.  The coffee is roasted longer and to a higher temperature, thus erasing most of the origin flavors and highlighting any imperfections in the roast. The flavors left behind in a well-executed roast are smoky, chocolatey, and bittersweet.  Many dark roast coffees taste burnt and bitter, there is a fine line of producing a fantastic dark roast and producing burnt, charred beans.
