Background Information
Coffee has been grown for centuries in Ethiopia and is a vital part of the nation’s economy. Ethiopia is the birthplace of Arabica coffee and is estimated to be responsible for a third of the world's coffee production. Sidamo is a province in the Ethiopian Highlands, which is where coffee is believed to have originated from. All coffee grown in the Highlands is classified as Strictly High Grown (SHG). SHG coffees grow more slowly than their lower land counterparts and therefore have more time to absorb nutrients and develop richer flavors from their surrounding environment and soil. Sidamo coffees are known for their distinct lemon and citrus flavors coupled with bright crisp acidity. We have selected the highest quality award-winning Ethiopian Yirgacheffe Sidamo to add to our line up.
 
Our Offering
Our Ethiopian Yirgacheffe is cultivated by family-owned farms that deliver their ripe cherries to a local coffee mill where the cherries are processed. The beans are then fermented for 36 to 48 hours before washing takes place. After washing, the beans are placed on raised drying beds and left to dry for 12 to 15 days. Once the moisture of the beans has been reduced to 11.5%, they are then transported to the capital of Ethiopia to be dehulled, sorted, and bagged for export.
